Est il possible de récupérer via un script lua les valeurs d un capteur par exemple 1h avant, 1 jour avant ?

Salut, non pas selon moi. Il faudrait plutôt stocker les données dans des variables utilisateurs (via un script), et travailler après sur ces variables.
Mais tu peux le faire en PHP en allant chercher directement dans la base:
